Ingredients

  • 2 cups cherries, pitted and halved
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 cup brewed coffee, cooled
  • 1/2 cup coffee liqueur (optional)
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a large bowl, whip the heavy cream and sugar until soft peaks form.
  2. Fold in the mascarpone cheese until well combined.
  3. In another bowl, combine the cooled coffee and coffee liqueur.
  4. Dip each ladyfinger into the coffee mixture for a few seconds, then layer them in a serving dish.
  5. Spread half of the mascarpone cream over the ladyfingers.
  6. Add half of the cherries on top of the cream.
  7. Repeat the layers with the remaining ingredients.
  8. Chill in the refrigerator for at least 4 hours.
  9. Before serving, dust with cocoa powder.

Notes

  • For an added twist, consider using a layer of chocolate ganache.
  • Adjust the sweetness by adding more or less sugar to the cream based on your taste.
