Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Add the diced chicken and cook until no longer pink.
- Push the chicken to the side and pour in beaten eggs, scrambling until cooked.
- Add cooked rice and mixed vegetables, stir to combine.
- Pour soy sauce over the mixture and stir well.
- Garnish with chopped green onions and serve hot.
Notes
- For a spicy kick, add chili sauce to taste.
- You can substitute chicken with shrimp or tofu for a different protein.
