Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions and garlic, sauté until translucent.
- Stir in the flour and cook for 1 minute.
- Gradually add chicken broth, stirring continuously until thickened.
- Add the heavy cream, thyme, salt, and pepper; mix well.
- Add cooked chicken, peas, and carrots; stir to combine.
- In a separate pot, cook the rotini pasta according to package instructions.
- Drain pasta and add to the sauce, mixing until coated.
- Serve hot and enjoy!
