- 2 pounds chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon lemon juice
- 1/2 teaspoon red pepper flakes
- 2 cups Arborio rice
- 4 cups chicken broth (for rice)
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil and sauté chicken until browned and cooked through. Remove and set aside.
- Add garlic to the skillet and cook until fragrant, about 1 minute.
- Pour in chicken broth and lemon juice, then stir in red pepper flakes.
- Add the Arborio rice, stirring well to combine, and cook until the rice is translucent.
- Gradually add chicken broth for the rice, stirring continuously until absorbed.
- Once the rice is creamy, stir in heavy cream and Parmesan cheese, mixing until smooth.
- Return the chicken to the skillet and mix everything together.
- Garnish with parsley and adjust seasoning with salt and pepper.
Notes
- For a spicier kick, add more red pepper flakes.
- Make sure to stir the rice frequently to prevent sticking.
