Ingredients

  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, cocoa powder, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in heavy cream and vanilla extract.
  7. Pour cheesecake mixture over the crust and bake for 50-60 minutes.
  8. Let it cool completely, then refrigerate for at least 4 hours.
  9. For ganache, heat heavy cream in a saucepan and pour over chopped chocolate, stirring until melted.
  10. Pour ganache over cooled cheesecake and let set before serving.

  • For a richer flavor, use dark chocolate for the ganache.
  • Allow the cake to sit at room temperature for 30 minutes before serving for best texture.
