Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter; press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Blend in sour cream and melted chocolate chips until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for about 55 minutes or until the center is set.
  8. Let it cool before refrigerating for at least 4 hours.
