- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Sift in the flour and add the vanilla extract and salt; mix until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut into desired shapes.
- Place cookies on a baking sheet and bake for 15 minutes, or until lightly golden.
- Allow cookies to cool completely on a wire rack.
- Melt chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth.
- Dip half of each cookie into the melted chocolate, letting the excess drip off.
- Return the cookies to the wire rack to set.
Notes
- For a more intense chocolate flavor, use dark chocolate chips.
- These cookies can be stored in an airtight container for up to a week.
