- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups heavy cream
- 8 ounces bittersweet chocolate, chopped
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract (for mousse)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.
- Slowly add the boiling water to the batter, mixing until smooth.
- Divide the batter between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- For the mousse, melt the chopped chocolate in a double boiler and let it cool slightly.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold in the melted chocolate, powdered sugar, and vanilla extract.
- Once the cakes are cool, spread a layer of mousse on top of one cake layer, then place the second layer on top and cover with more mousse. Decorate as desired.
Notes
- For extra flavor, consider adding a pinch of espresso powder to the batter.
