- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 cup brown sugar
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, sift together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, then carefully mix in the boiling water.
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes.
- Allow the cakes to cool completely before removing them from the pans.
- For the frosting, beat together the peanut butter, powdered sugar, and vanilla extract until creamy.
- Frost between the layers and on top of the cooled cakes.
Notes
- This cake is best served at room temperature.
- For an extra touch, drizzle melted chocolate on top of the frosting.
