- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 jar Morello cherries
- 2 cups heavy cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 ounce chocolate shavings
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla; beat for 2 minutes on medium speed.
- Stir in boiling water until well blended.
- Pour batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool for 10 minutes, then remove cakes from pans to cool completely.
- Once cooled, slice the cakes in half horizontally.
- Whip the cream with powdered sugar and vanilla until stiff peaks form.
- Place one layer of cake on a serving platter, top with cherries, and half of the whipped cream.
- Repeat layers, finishing with whipped cream and chocolate shavings on top.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
- Chill the yolks and whites of the eggs before baking for fluffier cakes.
