- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 2 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 tablespoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In a large bowl, beat together cream cheese, 1 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- While the cheesecake is baking, mix the remaining sugar and cinnamon.
- Once baked, let the cheesecake cool and sprinkle the cinnamon sugar mixture over the top.
- Refrigerate for at least 4 hours before serving.

- For an added twist, serve with whipped cream or chocolate sauce.
