  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 2 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat together cream cheese, 1 cup sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set.
  7. While the cheesecake is baking, mix the remaining sugar and cinnamon.
  8. Once baked, let the cheesecake cool and sprinkle the cinnamon sugar mixture over the top.
  9. Refrigerate for at least 4 hours before serving.
