Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix crushed graham crackers with melted butter and press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla and ground cinnamon.
  6. Pour the filling over the crust and smooth the top.
  7. Bake for 55 minutes or until set.
  8. Allow to cool, then chill in the refrigerator for at least 4 hours before serving.
