Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, combine brown sugar and cinnamon. Set aside.
  4. In a large mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar, then eggs one at a time. Mix in vanilla and sour cream.
  5. Pour half of the cheesecake mixture over the crust. Sprinkle with half of the cinnamon sugar mixture. Pour the rest of the cheesecake mixture over and sprinkle with remaining cinnamon sugar.
  6. Bake for 55-60 minutes or until the center is set. Let cool and refrigerate for at least 4 hours before serving.

Notes

  • For best results, use room temperature ingredients.
  • You can add nuts for extra crunch if desired.
