Instructions
- Preheat the oven to 350°F (175°C).

- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the cinnamon and brown sugar.
- Roll out the dough, sprinkle with the cinnamon sugar, and roll it up tightly.
- Slice the dough into cookies and place them on a baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool before serving.
