  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes, then let it cool.
  4. In a large bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla until fully combined.
  5. Fold in the sliced bananas into the cream cheese mixture.
  6. Pour the banana mixture into the cooled crust and spread evenly.
  7. In a separate bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.
  8. Spread the whipped cream over the top of the cheesecake.
  9. Chill the cheesecake in the refrigerator for at least 4 hours before serving.
