- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon garlic powder
- 2 cups beef broth
- 1 large onion, chopped
- 3 carrots, chopped
- 2 stalks of celery, chopped
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 325°F (165°C).
- Season the beef roast with salt, pepper, and garlic powder.
- In a large oven-safe pot, heat the olive oil over medium-high heat and sear the roast on all sides until browned.
- Add the chopped onion, carrots, and celery to the pot.
- Pour the beef broth over the roast and bring to a simmer.
- Cover the pot and transfer it to the preheated oven.
- Cook for about 3 hours or until the meat is tender.
- Remove from the oven and let it rest for 10 minutes before slicing.
- Garnish with fresh parsley before serving.

- For an extra flavor boost, marinate the roast overnight with spices.
- Serve with mashed potatoes or spätzle for a complete meal.
