- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt

- 2 tablespoons chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the potatoes thinly, making sure not to cut all the way through the bottom.
- In a pan, cook the turkey bacon until crispy, then chop into pieces.
- Drizzle olive oil over the potatoes and sprinkle with garlic powder, salt, and pepper.
- Stuff the sliced potatoes with bacon and cheese.
- Bake in the preheated oven for about 45 minutes or until the potatoes are tender.
- Remove from the oven and top with sour cream and green onions before serving.
