- 3 pounds chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 cup carrots, chopped
- 1 cup potatoes, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 teaspoons dried thyme
Instructions
- Heat the olive oil in a pan over medium-high heat.
- Season the roast with salt and pepper and sear on all sides for 5-7 minutes.
- Place the seared roast in the slow cooker.
- Add the beef broth, carrots, potatoes, onion, garlic, and thyme.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the roast and let it rest for 10 minutes before slicing.
- Serve with the cooked vegetables and sauce.
Notes
- For extra flavor, you can add red wine to the broth.
- Feel free to substitute vegetables according to your preference.
