Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the eggs and gradually add sugar until it becomes fluffy.
- Mix in coconut milk and vanilla extract.
- Fold in the dry ingredients and then the shredded coconut.
- Pour the batter into a greased baking sheet and spread evenly.
- Bake for 25 minutes or until a toothpick comes out clean.
- Once cooled, carefully roll the cake with parchment paper.
- Let it rest for a few hours.
- Unroll and fill with coconut cream before rolling it back up.
Notes
- For a tropical twist, add a hint of lime zest to the filling.
- Ensure the cake is completely cooled before unrolling.
