- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup sweetened condensed milk
- 1 cup coconut milk
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine flour, baking powder, and salt in another bowl. Gradually add to the creamed mixture alternately with coconut milk.
- Fold in the shredded coconut.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra coconut flavor, use coconut extract in place of vanilla.
- Top with whipped cream and toasted coconut for a festive touch.
