- 1 can coconut milk
- 1 can sweetened condensed milk
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup sugar
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan over medium heat, combine sugar and water to create a caramel sauce. Stir until it turns golden brown.
- Pour the caramel into a flan mold.
- In a blender, blend coconut milk, sweetened condensed milk, eggs, and vanilla extract until smooth.
- Pour the mixture over the caramel in the mold.
- Bake in a water bath for about 50-60 minutes, or until set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Serve with fresh fruit for an extra touch.
- This flan can also be made a day ahead for better flavor.
