- 1/4 cup lemon curd
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour and shredded coconut.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the lemon curd gently.
- Drop tablespoonfuls of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool before serving.
Notes
- For a stronger lemon flavor, add more lemon curd to the mixture.
