- 2 teaspoons vanilla extract
- 1 package ladyfinger cookies
- 1/2 cup strong brewed coffee
- 2 tablespoons cocoa powder
- 1/4 cup shredded coconut, toasted
Instructions
- In a mixing bowl, combine the coconut cream, coconut rum, mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until smooth and creamy.
- Dip each ladyfinger briefly in the brewed coffee.
- In a serving dish, layer the dipped ladyfingers and coconut cream mixture alternately.
- Sprinkle cocoa powder between the layers.
- Top the final layer with shredded toasted coconut.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a non-alcoholic version, omit the coconut rum.
- Use dairy-free alternatives for a vegan version.
- Garnish with additional toasted coconut before serving.
