- 3 pounds chuck roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup French onion soup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon thyme

- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Season the chuck roast with salt and pepper on both sides.
- In a large oven-safe pot, heat olive oil over medium-high heat.
- Brown the chuck roast on all sides for about 4-5 minutes each side.
- Add sliced onions and garlic to the pot and sauté until softened.
- Pour in the beef broth, French onion soup, Worcestershire sauce, thyme, and rosemary.
- Bring the mixture to a simmer, cover the pot, and transfer it to the preheated oven.
- Bake for 3 hours or until the roast is tender and easily shredded with a fork.
- Remove from the oven and let rest for a few minutes before serving.
