Ingredients

  • 6 slices turkey bacon
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup pasta of choice
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 cups chopped kale or spinach

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add onions and garlic, sauté until translucent.
  3. Add chicken broth and bring to a boil.
  4. Stir in the pasta and cook until al dente.
  5. Add the chopped turkey bacon, Parmesan cheese, Italian seasoning, salt, and black pepper.
  6. Finally, stir in the chopped kale or spinach until wilted.
  7. Serve hot with additional Parmesan if desired.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Feel free to add other vegetables as desired.
