Ingredients

  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 stalks celery, diced

  • 2 cups cooked rice
  • 2 green onions, sliced

Instructions

  1. Rinse and soak the red beans overnight.
  2. In a pot, heat olive oil and sauté onion, celery, and bell pepper until soft.
  3. Add garlic and cook for another minute.
  4. Drain and add soaked beans along with water and Cajun seasoning.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour until beans are tender.
  6. Serve over cooked rice and garnish with green onions.
