Ingredients

- 1 cup dried red beans
- 4 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 stalks celery, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 2 cups cooked rice
- 2 green onions, sliced
Instructions
- Rinse and soak the red beans overnight.
- In a pot, heat olive oil and sauté onion, celery, and bell pepper until soft.
- Add garlic and cook for another minute.
- Drain and add soaked beans along with water and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for about 1 hour until beans are tender.
- Serve over cooked rice and garnish with green onions.
Notes
- For best flavor, soak beans overnight.
- Adjust seasoning to taste.
