- 1 cup cottage cheese
- 1 cup grated zucchini
- 1 cup all-purpose flour

- 1/4 cup vegetable oil

Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine the cottage cheese, grated zucchini, sugar, vegetable oil, egg, and vanilla extract.
- In another bowl, mix the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
- For a sweeter muffin, consider adding chocolate chips or nuts to the batter.
- Make sure to wring out excess moisture from the zucchini before adding it to the mixture.
