Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the cottage cheese, grated zucchini, sugar, vegetable oil, egg, and vanilla extract.
  3. In another bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.
