Ingredients

  • 1 pound chicken breast, shredded
  • 4 slices turkey bacon, chopped
  • 1 can (15 oz) white beans, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup corn, frozen or canned

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the shredded chicken, beans, diced tomatoes, chicken broth, and spices.
  3. Stir well to combine and bring to a boil.
  4. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  5. Add in corn and cooked turkey bacon, stir and cook for an additional 5 minutes.
  6. Serve hot and enjoy!
