Ingredients

  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, cream cheese, half of the shredded cheese, garlic powder, onion powder, and cumin.
  3. Spread a layer of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll, and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining shredded cheese.
  6. Bake for 25-30 minutes until bubbly and golden.

Notes

  • For extra flavor, add chopped green chilies or jalapeños to the filling.
  • You can substitute turkey or beef for chicken.
