Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups roasted onions
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, and add them to the skillet. Cook for 5-7 minutes on each side or until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add garlic and sauté for about 30 seconds.
  5. Add roasted onions and sun-dried tomatoes, stirring to combine.
  6. Pour in balsamic vinegar and cook for another 2 minutes.
  7. Add heavy cream, stirring to blend, and bring to a simmer.
  8. Return chicken to the skillet, spoon sauce over the top, and let it heat through for 2-3 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in balsamic vinegar for an hour before cooking.
  • Serve with a side of pasta or crusty bread to soak up the sauce.
