- 4 boneless, skinless chicken breasts
- 2 cups roasted onions
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper, and add them to the skillet. Cook for 5-7 minutes on each side or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds.
- Add roasted onions and sun-dried tomatoes, stirring to combine.
- Pour in balsamic vinegar and cook for another 2 minutes.
- Add heavy cream, stirring to blend, and bring to a simmer.
- Return chicken to the skillet, spoon sauce over the top, and let it heat through for 2-3 minutes before serving.
Notes
- For extra flavor, marinate the chicken in balsamic vinegar for an hour before cooking.
- Serve with a side of pasta or crusty bread to soak up the sauce.
