- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup sour cream
- 1 can diced tomatoes
- 10 flour tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef until browned. Drain excess fat.
- Add the black beans, corn, taco seasoning, and diced tomatoes to the skillet. Mix well and let simmer for 5 minutes.
- Layer half of the tortillas in a baking dish, followed by half of the beef mixture, then half of the sour cream, and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Bake for 25-30 minutes until bubbly and golden on top.
- Allow to cool slightly before serving.
Notes
- This casserole can be customized with your favorite toppings like jalapeños or avocado.
- For a vegetarian option, substitute the ground beef with seasoned lentils or beyond meat.
