  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup sour cream
  • 1 can diced tomatoes
  • 10 flour tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Add the black beans, corn, taco seasoning, and diced tomatoes to the skillet. Mix well and let simmer for 5 minutes.
  4. Layer half of the tortillas in a baking dish, followed by half of the beef mixture, then half of the sour cream, and half of the cheese.
  5. Repeat the layers with the remaining ingredients.
  6. Bake for 25-30 minutes until bubbly and golden on top.
  7. Allow to cool slightly before serving.
