Ingredients

  • 1 pound boneless chicken breasts
  • 8 ounces penne pasta
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add chicken and sprinkle Cajun seasoning. Cook until chicken is browned and cooked through, about 6-8 minutes.
  3. Add minced garlic to the pan and sauté for 1 minute.
  4. Pour in heavy cream and bring to a simmer. Stir in mozzarella and Parmesan cheese until melted and smooth.
  5. Add cooked pasta to the sauce and toss to combine. Season with salt and pepper.
  6. Garnish with chopped parsley and serve warm.
