- 1 pound boneless chicken breasts
- 8 ounces penne pasta
- 1 teaspoon Cajun seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 2 tablespoons chopped parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a pan, heat olive oil over medium heat. Add chicken and sprinkle Cajun seasoning. Cook until chicken is browned and cooked through, about 6-8 minutes.
- Add minced garlic to the pan and sauté for 1 minute.
- Pour in heavy cream and bring to a simmer. Stir in mozzarella and Parmesan cheese until melted and smooth.
- Add cooked pasta to the sauce and toss to combine. Season with salt and pepper.
- Garnish with chopped parsley and serve warm.
Notes
- For extra spice, add more Cajun seasoning.
- Leftovers can be reheated in the microwave.
