Ingredients

- 1 pound shrimp, peeled and deveined
- 2 cups corn, fresh or frozen
- 1 cup heavy cream
- 1 tablespoon cajun seasoning
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until translucent.
- Stir in the cajun seasoning and cook for another minute.
- Add the chicken broth and bring to a boil.
- Stir in the corn and simmer for 5 minutes.
- Add the shrimp and heavy cream and cook until the shrimp are pink and cooked through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- This chowder can be made in advance and reheated.
- For a spicier version, add more cajun seasoning.
