- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup turkey bacon, cooked and crumbled
- 1 cup sour cream
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
Instructions
- In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, cherry tomatoes, and turkey bacon.
- In a separate bowl, mix together the sour cream, mayonnaise, lime juice, garlic powder, and cumin until well combined.
- Pour the creamy mixture over the bean and vegetable mixture and stir until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips or fresh veggies.
Notes
- For an extra kick, add diced jalapeños to the mix.
- This dip can be made a day ahead for better flavor.
