- 4 boneless, skinless chicken breasts
- 8 ounces turkey bacon
- 1 cup sliced mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked rice
- 1 cup shredded cheese (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook turkey bacon until crispy. Remove and set aside.
- In the same skillet, add chicken and cook until browned on both sides. Remove and set aside.
- In the skillet, sauté onions, mushrooms, and garlic until soft.
- Stir in heavy cream, chicken broth, thyme, salt, and pepper. Bring to a simmer.
- In a baking dish, combine cooked rice, chicken, and bacon. Pour cream mixture over the top.
- Top with shredded cheese if using.
- Bake in preheated oven for 25-30 minutes.
Notes
- Feel free to add vegetables like broccoli or asparagus for extra nutrition.
- Use low-fat cream for a lighter version.
