  • 4 boneless, skinless chicken breasts
  • 8 ounces turkey bacon
  • 1 cup sliced mushrooms
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, add chicken and cook until browned on both sides. Remove and set aside.
  4. In the skillet, sauté onions, mushrooms, and garlic until soft.
  5. Stir in heavy cream, chicken broth, thyme, salt, and pepper. Bring to a simmer.
  6. In a baking dish, combine cooked rice, chicken, and bacon. Pour cream mixture over the top.
  7. Top with shredded cheese if using.
  8. Bake in preheated oven for 25-30 minutes.
