Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chicken thighs and cook until browned.
  3. Add minced garlic and cook for another minute.
  4. Stir in heavy cream, salt, pepper, and thyme.
  5. In a separate baking dish, toss baby potatoes with olive oil, salt, and pepper.
  6. Place the chicken in the same baking dish with potatoes and roast for 25-30 minutes.
  7. Serve hot and enjoy!
