- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons soy sauce

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until fragrant.
- Add sliced mushrooms and thyme; cook until mushrooms are browned.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and soy sauce; season with salt and pepper.
- Simmer for another 5 minutes, then serve hot.

- For extra creaminess, blend a portion of the soup before serving.
