- 1 pound ground beef

- 12 lasagna noodles, broken into pieces

- 1 cup shredded mozzarella cheese

Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef and cook until browned.
- Stir in crushed tomatoes, broth, lasagna noodles, and Italian seasoning. Bring to a boil, then reduce heat and simmer until noodles are tender.
- In a small bowl, mix ricotta cheese with salt and pepper.
- Serve soup topped with ricotta, mozzarella, and Parmesan cheese.

- For a vegetarian version, substitute ground beef with a mix of sautéed mushrooms and zucchini.
