- 8 ounces pasta of your choice
- 2 cups corn, cooked
- 1 cup diced bell peppers
- 1/2 cup red onion, finely chopped
- 1 cup cilantro, chopped
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and cool.
- In a large bowl, combine corn, bell peppers, red onion, and cilantro.
- In a separate bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over it. Mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add diced avocado for extra creaminess.
- This salad can be served warm or cold.
