Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onions and garlic, cooking until softened.
- Add mushrooms and cook until they release their moisture.
- Pour in the chicken broth and add wild rice, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until the rice is tender.
- Stir in heavy cream and heat through.
- Serve hot.
