- 1 pound chicken breasts, diced
- 8 ounces mushrooms, sliced
- 1 cup wild rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onions and garlic, sauté until translucent.
- Stir in the mushrooms and cook until softened.
- Add the diced chicken and cook until no longer pink.
- Pour in the chicken broth and wild rice, bring to a boil.
- Reduce heat and simmer for about 45 minutes or until the rice is tender.
- Stir in the heavy cream and thyme, and season with salt and pepper.
- Serve hot and enjoy!
