- 4 large potatoes, thinly sliced
- 2 cups mushrooms, sliced
- 1 cup brie cheese, cut into small pieces
- 2 medium sweet onions, caramelized
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 teaspoon thyme
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15 minutes.
- Layer half of the potato slices in a greased baking dish.
- Spread half of the mushrooms and half of the brie cheese over the potatoes.
- Top with half of the caramelized onions.
- Repeat the layering with the remaining ingredients.
- In a bowl, mix the heavy cream with thyme, salt, and pepper, then pour over the layered bake.
- Bake for 45-50 minutes or until the top is golden and the potatoes are tender.
- Let it rest for 10 minutes before serving.
Notes
- For a richer flavor, add a splash of white wine to the cream mixture.
- Feel free to substitute any other cheese if brie is not available.
