Ingredients

  • 4 large potatoes, thinly sliced
  • 2 cups mushrooms, sliced
  • 1 cup brie cheese, cut into small pieces
  • 2 medium sweet onions, caramelized
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15 minutes.
  3. Layer half of the potato slices in a greased baking dish.
  4. Spread half of the mushrooms and half of the brie cheese over the potatoes.
  5. Top with half of the caramelized onions.
  6. Repeat the layering with the remaining ingredients.
  7. In a bowl, mix the heavy cream with thyme, salt, and pepper, then pour over the layered bake.
  8. Bake for 45-50 minutes or until the top is golden and the potatoes are tender.
  9. Let it rest for 10 minutes before serving.

Notes

  • For a richer flavor, add a splash of white wine to the cream mixture.
  • Feel free to substitute any other cheese if brie is not available.
