Ingredients
– 8 oz pasta (linguine or fettuccine)
– 1 lb shrimp, peeled & deveined
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 1 cup cherry tomatoes, halved
– 1 cup heavy cream
– ½ cup Parmesan cheese, grated
– ½ cup chicken broth
– 1 tsp Italian seasoning
– ½ tsp red pepper flakes (optional)
– Salt & pepper, to taste
– Fresh basil, for garnish
Instructions
1. Cook pasta according to package instructions; drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt & pepper, and cook until pink (about 2-3 minutes per side). Remove and set aside.
3. In the same skillet, add garlic and cherry tomatoes. Cook until tomatoes soften.
4. Pour in chicken broth and simmer for 2 minutes. Add heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Stir and let it thicken slightly.
5. Return shrimp to the skillet and toss to coat. Add cooked pasta and mix well.
6. Garnish with fresh basil and serve immediately.
Notes
– For extra richness, add a splash of white wine before the broth.
– Adjust spice level by increasing or omitting red pepper flakes.
– Use fresh or canned diced tomatoes if cherry tomatoes are unavailable.
