- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 tablespoon sugar
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
- In the same pot, add onion and garlic, and sauté until soft.
- Add crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper. Simmer for 20 minutes.
- Use an immersion blender to purée the soup until smooth.
- Stir in heavy cream and chopped turkey bacon. Heat through and serve.
Notes
- For extra flavor, consider adding a pinch of red pepper flakes.
- Serve with grilled cheese sandwiches for a comforting meal.
