Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
  2. In the same pot, add onion and garlic, and sauté until soft.
  3. Add crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper. Simmer for 20 minutes.
  4. Use an immersion blender to purée the soup until smooth.
  5. Stir in heavy cream and chopped turkey bacon. Heat through and serve.
