- 1 pound ground chicken

- 1 cup orzo
- 1 cup heavy cream
- 2 cups baby spinach
- 1/2 cup sun-dried tomatoes, chopped
Instructions
- In a bowl, mix the ground chicken, breadcrumbs, egg, Parmesan, garlic, and Italian seasoning.
- Form the mixture into meatballs.
- Heat olive oil in a large skillet over medium heat and cook meatballs until browned.
- Add chicken broth and bring to a simmer.
- Stir in orzo and cook until tender.
- Reduce heat and stir in heavy cream, spinach, and sun-dried tomatoes.
- Cook until heated through and serve.

- Feel free to add other vegetables to the dish.
