  • 8 ounces pasta of your choice
  • 1 pound salmon fillets
  • 4 strips turkey bacon
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove from skillet and set aside.
  3. In the same skillet, add salmon fillets and cook until browned and cooked through. Remove and flake into large pieces.
  4. Add garlic and cook until fragrant. Stir in sun-dried tomatoes and spinach. Cook until spinach wilts.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
  6. Add cooked pasta and flaked salmon to the skillet. Stir to combine and heat through.
  7. Season with salt and pepper. Top with crispy turkey bacon before serving.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Feel free to add more vegetables like bell peppers or peas.
