- 8 ounces pasta of your choice
- 1 pound salmon fillets
- 4 strips turkey bacon
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove from skillet and set aside.
- In the same skillet, add salmon fillets and cook until browned and cooked through. Remove and flake into large pieces.
- Add garlic and cook until fragrant. Stir in sun-dried tomatoes and spinach. Cook until spinach wilts.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
- Add cooked pasta and flaked salmon to the skillet. Stir to combine and heat through.
- Season with salt and pepper. Top with crispy turkey bacon before serving.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Feel free to add more vegetables like bell peppers or peas.
