  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon, diced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced turkey bacon and cook until crispy.
  2. Remove the bacon and set aside, reserving some of the drippings in the skillet.
  3. Add garlic to the skillet and sauté until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in the Italian seasoning, salt, and pepper.
  5. Add shrimp and cook until pink and opaque.
  6. Mix in cherry tomatoes and spinach, cooking until spinach is wilted.
  7. Return crispy turkey bacon to the skillet, stir, and serve warm.
