- 1 pound shrimp, peeled and deveined
- 4 slices turkey bacon, diced
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced turkey bacon and cook until crispy.
- Remove the bacon and set aside, reserving some of the drippings in the skillet.
- Add garlic to the skillet and sauté until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in the Italian seasoning, salt, and pepper.
- Add shrimp and cook until pink and opaque.
- Mix in cherry tomatoes and spinach, cooking until spinach is wilted.
- Return crispy turkey bacon to the skillet, stir, and serve warm.
Notes
- For a spicy kick, add red pepper flakes to taste.
- This dish pairs well with pasta or rice.
