Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 (8 oz) packages cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ¼ cup light brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and heavy cream.
  4. Pour the cream cheese mixture over the crust and smooth the top.
  5. Bake for 60-70 minutes until set. Let it cool and refrigerate for at least 4 hours.
  6. Before serving, sprinkle brown sugar on top and use a torch to caramelize.

Notes

  • For a creamier texture, let the cheesecake sit at room temperature for 30 minutes before serving.
  • Don't skimp on the caramelizing step for the best flavor!
