- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- ¼ cup light brown sugar
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In another bowl, beat the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and heavy cream.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for 60-70 minutes until set. Let it cool and refrigerate for at least 4 hours.
- Before serving, sprinkle brown sugar on top and use a torch to caramelize.
Notes
- For a creamier texture, let the cheesecake sit at room temperature for 30 minutes before serving.
- Don’t skimp on the caramelizing step for the best flavor!
