- 1 pound chicken breasts, diced
- 1 cup plain breadcrumbs
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 cups cooked rice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine breadcrumbs and grated parmesan cheese.
- Dip chicken pieces in flour, then eggs, and finally coat them with the breadcrumb mixture.
- Place chicken on a greased baking sheet and bake for 20-25 minutes, or until golden and cooked through.
- In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Stir in heavy cream and bring to a simmer, then add cooked rice and mix until well combined.
- Season the rice with salt and pepper to taste and serve with the crispy chicken bites.

- For extra flavor, marinate chicken in spices before breading.
