- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchinis into fry-sized pieces.
- In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan, garlic, salt, pepper, and Italian seasoning.
- Dip the zucchini fries in the egg and then coat them in the breadcrumb mixture.
- Place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
Notes
- For extra flavor, you can add paprika or cayenne pepper to the breadcrumb mixture.
- Serve with your favorite dipping sauce.
